This past week I have had a craving for pasta. However, I didn’t want just pasta, I wanted to make it a little more fun and tasty. Usually I make my quinoa pasta with broccoli but I had so much kale left over, I decided to do something differently. The recipe came out so yummy that my 4 and a half-year old ate the entire bowl (YES!!)

What you will need:

  • spaghetti (I prefer the quinoa kind)
  • 2 tablespoons good extra virgin olive oil
  • 4 sprigs kale, very finely chopped
  • Salt and freshly ground pepper
  • 1 large garlic clove, finely chopped
  • Juice of 1 lemon wedge

What you will do:

  • Cook the pasta
  • When the pasta is almost done, heat the oil over medium heat in a large skillet
  • Add the kale and season with salt and pepper
  • Stir until the kale starts to get a bit crisp
  • Add the garlic
  • Add drained pasta, lemon juice, and stir to combine

Why you should eat kale:

  • Full of antioxidants
  • It fights against excessive inflammatory-related problems, such as arthritis, autoimmune disorders, and asthma
  • Consuming kale also provides glucosinolates, which have been shown to prevent colon, breast, bladder, prostate, ovarian cancers, as well as gastric cancer
  • It has high fiber content
  • It helps your body detox
  • Kale provides a whopping dose of vitamin K (providing 1327% of the RDA in one cup)
  • It has over 192% of the RDA of vitamin A, one cup of kale is an effective antioxidant, boosts immunity, maintains healthy bones and teeth, prevents urinary stones, and is essential to our reproductive organs
  • Vitamin C, which one cup of kale heartily provides (over 88% of our RDA)

Also, kale is one of my favorite things in the world, so I’m always excited to get new recipes with it as a lead ingredient. I like to throw it on top of homemade pizza before baking, too, which gives a nice crunchy texture (with the added benefit of making me feel slightly healthier about indulging).
